It’s Monday. Hope everyone had a great Easter. The girlfriend headed down to central Illinois to spend it with her family, while I made my usual stop at mine. As always, my mom went all out with a massive big-ass ham. I’m an absolute sucker for a juicy ham, so it shocked no one—least of all me—when I realized I’d gone way overboard. It was just that damn good.

Of course, the real win with a big-ass ham is the leftovers. I’ve got enough to keep things interesting all week—ham sandwiches, casseroles, scalloped potatoes with ham, ham and cheese omelets, ham and potato soup, ham and bean soup, ham quesadillas, ham and cheese sliders… you get the idea. Not a bad problem to have.
