Roasted Goodness

It’s Wednesday. It’s that time of the year, time to fill the air with the warm smell of roasted pumpkin seeds! That’s right, I spent the afternoon yesterday gutting ‘ole Jack and extracting his seeds. I like mine extremely salty which is why they appear so white.

Want to try it yourself? Simply clean the seeds by putting them in a colander and rinsing thoroughly with water. Spread the seeds out on a pan and salt them as desired. Preheat the oven to 300 degrees. Place the pan on the middle rack in the oven. Cooking time will vary, but expect roughly 15 minutes depending on how crispy you like them. I check them frequently, sampling them until they have just the right crunch and enjoy!
